I already read/studied more about this kind of beer, which is fantastic, but in summary is more like a CHAMPAGNE than a beer (personally). Far away one of my favorite kind of beers ever so far. Cherries everywhere, acidity leverage, sweet and delicious 🍷

This is how you get this style right. Rich & sweet cherries on a young lambic base. The tartness of the cherries & lambic sourness are relatively restrained, but combine to cut through the sweetness just enough to keep this refreshing & moreish.

Very natural taste of cherries and lambic. Perfectly balanced in tartness, crisp and light. Tastes like lambic and fresh pressed cherry juice. Has some of that lambic minerality too. Excellent.
