Nose is musty mushroom, apricots pop under the surface as an accent vs dominating, some winey white grape notes, wildflowers and more floral things as it warms. Palate has a lot more apricot than the nose. Moderately acidic initially before the…

Mushroomy goodness. Notes to come later.

Dug this. Adjuncts be damned, this is still bitter espresso and dark chocolate for days. Even when they bastardize the base, it’s still unapologetically KBS

Just like KBS, what’s to say? Espresso beans and dark chocolate, pine resin happy balance. All time banger.

Free airport beer? Sure. Nose is a middle ground between pine/resin and caramel malt. Biscuity and semi-sweet notes with accents of florals, but not really as aggressive as I’d like. Palate doesn’t really “do much” TBH. One note pine/resin, hit of sweet.

Nose is sweet raspberry purée, cherry pie. Palate is less sweet than the nose. A little bit of geuzey funk

Utopias Barrel - Aged World Wide Stout (2021) Hersh
Nose is raisin, date, vanilla, cocoa powder, rum/cordial. Palate brings some of the roast character and espresso of the base stout but loads of oak and vanilla tannin. Boozy warmth to close. Really good.

Nose is straight beets. Earthy and soil. Behind that is a light geuze funk and woody character. Palate initially highlights the beet but then adds in some red berry, umami/mushroomy tones, finish with a moderate acid and tannic woody character. Awesome.

Mushroom/umami and wet wood barrel nose. Palate is unmistakable Belgian-only level woody, earthy funk. Boon remains a fantastic easily accessible Geuze

The least complex out of the tasting (expectedly) but still a good amount of woody and cheesy lambic goodness

Umami, mushroom, rich oak character. Cheesy and stinky in the right ways with a sweetness to round it out.

Oude Geuze Boon à l'Ancienne - VAT 92 Mono Blend Hersh
Dirt, mushroom, tobacco/oak, cheese. Reminds me so much of 3F. Dirty and earthy with a nice malty sweetness behind it.

Brighter and more citrus-forward kind of acidity here. White wine grapes lead the way while the unambiguous/funk serve as a lovely backdrop. Just killer.

Huge stonefruit nose.Apricot and peach skins over a prominent oak, subtle cheese/funk, and light acidic backdrop. Palate leads with bright lemony acidity before a robust and layered oak/funk driven base.3F-esque wood.Nuanced apricot, umami notes. Cohesive

Really get the port barrel raisin and plum notes. Caramel and some moderate wood and baked bread. Way different than most Cantillon and it’s delightful

Another banger. Floral hops, herbal/wood, musty goodness

Damn. Red grape, berry, big on the eucalyptus Brett horsey quality. Slightly medicinal notes as it closes. Rich and mildly vinous body. Bomb.

Nose is musty and mildly vinous white grape, tobacco and heavy oak. Palate is rich and mildly caramel accented.

Vegetal, tart, super musty and stinky funk on the nose. Better notes later.

Nutmeg, cinnamon, figs, caramel malt nose. Palate leads with the spice character. A lot of clove and nutmeg, lighter on the cinnamon. Caramel, toffee and dark fruit without going very sweet. A nice bitterness to close.

Insane. The wood and yeast character is just so deep and layered. Musty, mushrooms, hay/barnyard, olive(?). Subtle acidity that accentuates without taking away from the yeast. Reminded me of 3F house character.
