Wow! Every bit as awesome as I hoped. Like a Cantillion Gueuze but a champagne version. The base is the grand cru, but it doesn’t have any residual sweetness. The effervescence has its own special bitterness and a brightness. Barnyard funk and wine

Brewed 16th december 2015, bottled 23rd May 2019. Nose is fruity, lactic. Taste is dry, medium acidity, woody, slight tannin. Aftertaste has more pronounced tannin, tongue sticks in my mouth. Slight bitterness. Low carbonation, similar to the geuze.
