Canadian Breakfast Stout (CBS) Levy
2018. Excited to find this again, but it really lost something with age. The maple is pretty much gone. The coffee is a pleasant, mouth-filling flavor, but not as intense or complex as it could be.

Light, fresh, fruity, and smooth. Actually less acidic than I was expecting! Would be interested to see how this is with more aging.

Surprisingly approachable for a Cantillon. Hard to pick out any flavor notes other than "apricot lambic", but it's balanced so precisely.

Excellent nutty aroma. Flavor is smooth, balanced, tasty. Better than KBS classic, not as good as CBS.

Second to CBS. A year of aging does help to temper the strong BBA - could use another year or two, maybe. Overall, it has a rich bitter roast that I wish was a *little* more sweet or more rich.

I can see why they put this in the barleywine category, even though it's, like, twice as alcoholic. Similar mouthfeel, but with a quality citrus hop profile.

Can't detect much cognac up front. As a lambic, it is impressively soft and smooth - especially for Cantillon. Bumping up 0.25 as it aerates. Bumped it up another now that I'm at the sediment.

Very roasty. Behind the coffee is some matured chocolate & caramel malt. Maple is there but not much.

Even if they stop brewing CBS, I think I'll live. Honestly my only complaint is that I wish it was a little heavier!

I'm actually going to disagree with my last check-in. The 3yrs age really helped the complexity shine through, and the beer tastes as great as I remember it used to taste. Chocolate, milk, coffee, maple, bourbon, oatmeal. Smooth.
