Paired with Thai holy basil chicken wings which was a delicious pairing! Still a hint “thick” and dry hopping is definitely more grassy than ripe cheese but a delicious base nonetheless and I look forward to the years treating the rest of my bottles well.

Not sure I’ve had this beer this young before. Profile is of so very very young. Good in a way but not what it’s supposed to be. Needs at least a year to find its way.

It’s that marvellous time of the year when you can drink some relatively fresh Fou Foune. Not the best vintage apricot character-wise but very much always a delicious treat!

Very late Friday dinner due to work. This is developing beautifully. Funkier and more complex than last time and the acidity is still mellow and balanced.
