EB Frilltessence 2023. Paired with “steak salad”. Very nice for such a young grape blend. Plenty of depth and complexity. Very nice pairing too where the umami of the Parmesan and pine nuts bridge everything together amazingly.

EB Frilltessence 2023. Paired with cauliflower “steak” with fermented shiitake and bacon crisp. Has lost a lot of the really weird cauliflower vegetal notes which was kinda sad for the pairing but good for the beer. Still a hint volatile but also good.

EB Frilltessence 2023. Paired with isterband and beetroots. Delicious beer and a lovely pairing. Beetroots really work with the sour cherries. On of my favourite pairings of the day.

EB Frilltessence 2023. Paired with deep fried herring. Slightly simpler than the trousseau but still tasty. This one I’d say needs another 2-3 years to find its prime.

EB Frilltessence 2023. Paired with grynkorv. This is starting to sport some very nice funky complexity and the port barrel feels much better integrated now. Very nice!
