Funk forward. Not quite clear gold with a creamy white head that disappears. Funky barnyard aroma, honey, apple, pear? Effervescent, sharp acidity, honey, funky barn yard, wood. Dry.

Balsamic forward. Clear gold with almost no head. Balsamic aroma, barrel, red wine. Light acidity, not much carbonation, oak, light red wine notes, really refreshing even though it’s from 2018/19

Fruit forward. Hazed yellow with a low white head and small streaming carbonation bubbles. Fresh green apple and juicy apricot aroma, very light lactic. Lightly carbonated, refreshing acidity, crisp apple and soft apricot. Dry finish.
