Fruit Beer

We took a crisp, light-bodied cherry ale and hid it away in oak barrels that have held both bourbon and maple syrup. After a lengthy stint, it emerged a changed beer, blanketed in notes of warm vanilla and earthy sweetness. The wood proves itself the star of this beer, adding depth and taming the tart cherry while the maple imposes a velvety texture that lingers for not a moment too long.

The beer sounds a bit overkill but it's actually quite balanced and nice. Aroma of sweet sharp cherries with a touch of oak. The Beer is almost marshmallow-y but without the actual flavor. Nice touch of acid with cherries. Brown sugar finish and oak.

On the nose, this is dark berries and malt. The mouth feel is a little viscous, without being thick. The initial flavor is all cherries, then the bourbon and chocolate come in to balance the tartness very deliberately.
