Sour - Flanders Red Ale

Opera is a mixed fermentation sour beer and part of the Sator Square Series. Using a Flanders red ale base, whole Danish black cherries from Frederiksdal were added to start a wild fermentation. This cherry beer was then blended with a whisky barrel-aged stout and a third fermentation took place. Hand-bottled in winter 2022, the beer then underwent the final stages of conditioning to bring it to life. Opera has now finally made it into your glass, offering you rich cherry, chocolate and whisky barrel flavours with a sour twist.

This is an odd one. A kriek blended with Stout? Cherries, red grapes, sherry, also some more roasted stout-ish flavors, dark bitter chocolate, and a quite tart & bitter end. Interesting, a lot going on, but doesn't quite come together for me...

Tart sour cherries with dark malt and light smoke. Lovely combination. This is at the friendly end of the scale considering the style. Not a particularly complex flavour profile but it's really quite well balanced.

Tart and funky nose with wet wood.Taste is somewhat creamy with a bit of malty notes, hint of BA/barrel/wood, hint of licorice, mostly dry, some tartness and grape seed like bitterness. Somewhat drying mouthfeel. Like a "simple" version of a Penyllan beer

Normally I don't really like the wild fermented ales all to much, but this one hits the right spot! Lovely notes of whisky, coffee and darkroasted malt together with a very well-balanced flanders red base that brings JUST enough sourness to the beer.
