Out of the beer cellar, 2018 bottle. Sourness is prevalent. 😢could maybe pass for an our bruin, but the honey sweetness that paired well with the stout roastiness is now tart.

2019 bottle. Sweet, woody and a little fruity? Better after a few years.

This stout is a fusion of a Russian Imperial Stout aged in American oak and an Ethiopian Tej Honey Beer aged in Paraguayan Palo Santo Wood, resulting in a thick, rich brew. The wood-aged flavors are subtle but definitely present.

No funny adjuncts. This is just pure grains, the honey, and wood aging. It is strong, but no burn or heavy weight. Rich and crisp, it's definitely one for sharing.

Def sat on this waaaaay too long. Turned into soy sauce. Not rating it.

I think it would be a lot better if it was some kind of barrel aged instead of wood aged. The oak tannins just overpower the other flavors, still good though.
