Faint old barley, inside a shell smell, slight salinity, light peat. Flinty and mildly zesty, like the vinaigrette from an oyster shell. Very light.

Gueuze 100% Lambic Bio (2018) Hayward

Carb dropped off. Funk, chamois, white grape skin, grass. (Still not a waste of time)

Drogone Lambic (2022) Hayward

This’ll be great in a few years, it tastes a little young currently. Super acetic, a little wood character. It’s almost tart raspberry rather than grape.

Saint Lamvinus 2020 Hayward

Vinous, oaky, tannic, dry.

Camerise Lambic (2020) Hayward

There’s something super herbal yet spicy about this, with an almost pine needle like aroma. Not much of this in the taste, but straight up tannic red berry. Into it.

Magic Lambic (2020) Hayward

Had some previous years that have almost been “pastry lambic” (lol) but this year the vanilla is super oaky. Tart, and very raspberry heavy.
