Good old balsamic vinegar. Dried olives, cherries and dried herbs. Lou Pepe never disappoints in bringing together acidity, sourness, funkiness and a long oxidised finish.

Don't remember it so soft and bready. Dried lime, grass, hay and thyme notes. Rustic and herbal, fresh and funky. A classic.

Softer and more mellow than I remember. Full bodied farmy goodness, the only think I would touch is the acetic, bit otherwise a beauty!

Nearly forgot how perfumy and aromatic this one is. White peach, white flowers, grassy and dried herbs. Palate is both soft and mellow, while fresh and aromatic. Significant depth and freshness om those peachy notes. So elegant.

Red plums, cranberry, cherries and peppery aromas. Ripe juiciness, black fruit and leafy notes. Sharing peppery notes on the finish and that clean farmy finish with the Vigneronne from earlier.

Nose is very similar to the geuze, but with a bit of a fresher herbal character. Palate is where it stand out more, hay, dried apricots, dried herbs, dried lime and a long peppery finish. Love of how elegant and soft this is, a classic.

Vinegary and cidery nose. Very soft and mellow, acidity is bright from the rhubarb, but the bubble and yeasty character is incredibly ripe for such a young vintage.

Light delicate aromas of red berries. Very soft entrance, beautiful bubble and incredibly elegant yeasty body. Vinous funkiness comes in through elegant and delicate notes of dried berries, cereal and hay. Long cherry vinegary finish.

Blueberry and raspberry jammy aromas. What a blend of sweet and sour, very balanced without the vanilla taking over the sour fruitiness. Missing the usual funk but bringing together a fun combo with a serious enough fruitiness and depth.

Canadian Breakfast Stout (CBS) (2019) Pallares
Dark espresso, as clean and intense as it comes on the KBS, but adding that delightful maple touch. Dark choc and coffee notes remain the main focus here, maple adds a layer and an extra balance to that darl bitterness. A classic, so rich and balanced.

Sometimes you go right, sometimes you don't. This the latter, too bad I wasn't lucky enough, but thankful to Moeder for their raffle either way. Rubber aromas, quite acetic.

KBS Cinnamon Vanilla Cocoa (2021) Pallares
Dark choc and espresso aromas. Powerful chocolate entrance that evolves into dark roasted coffee notes. Slightly bitter, vanilla softens it up a bit, but it's actually pretty mild. Cinnamon, dried fruits, cigar and leathery notes on a the finish.

Gueuze 100% Lambic Bio (2010) Pallares
Not much on the nose. Time has turned this into pure balsamic vinegar. Acetic is under control, body is soft and smooth. Very wide palate showing notes of raisins, pepper, almonds and dried herbs. That rich mineral and funky finish is over the top.

Dark fruit aromas, leafy and peppery as well. Tart cherry notes on the palate, a slight carbonic bit on the entrance followed by those leafy and earthy notes. Dried berries and a funk cidery side as well.

Fresh leafy and blackcurrant aromas. Palate gets thicker and more syrupy with notes of cassis and marmalade, although not losing that fresh leafy touch.

50 Degrees N - 4 Degrees E (2020) (Cognac) Pallares
Nose is fairly modest. The blast comes in the palate, as it exudes notes of dried herbs and flowers. What stands out is a leathery and thicker body than your usual Cantillon, adding depth with dried citrics and a long funky finish with olives and hay.

KBS Maple Mackinac Fudge Pallares
Deep caramel and vanilla aromas. Oh that entrance is so smooth yet so dense, gotta love the KBS profile. Upon the classic malty and coffee profile we find a layer of maple and a salty rich finish. Thick, well balanced, smooth and dense. Lovely.

Roasted malty aromas, toasted caramel and espresso. Light delicate entrance, with the maple covering slightly the rye malty cereal body. Vanilla is the biggest adjunct adding a smooth silky finish, but this is still fairly light. Bourbon? Very light.

Yes, I did fall for their marketing.But you guys don't know how hard the wait is for that 6th book... Any way, the beer is pretty: meh.Light grapefruit aromas. Body is medium and perfumy with citrics and weak malty lagery notes.Short finish, clean tho.

Tart cherries and spices on nose. Cooked berries, not only jammy, but dried even and very intense and deep. Love how thick and generous the palate is. Soft texture mingling with those farmy notes very nicely. Finish is long and rich.

Fragrant white peach aromas. All about the peach skin, which makes this perfumy, elegant and fragrant. Those peach aromas are clean, intense and carry along a slight funkiness. This is outstanding, so rich yet balanced, so powerful yet elegant.

Acetic funky sourness. Yeasty and farmy body with hay, honeysuckle, dried herbs, lime and tart Golden apple notes. Finish is rich and what makes this stand out from your average Cantillon is the vinegary/vinous sourness and elegant funky touch.

Intense espresso notes on the nose. Boy I like coffee on beers...and especially when they find that balance rye malty body. Not overpowering with the dark coffee notes but balancing it nicely with dark choc. Creamy, foamy texture. Lovely long finish.
