KBS Maple Mackinac Fudge (2020) pawelski

Has sat two years. Plenty of chocolate, love the rich malt, not overtly coffee or maple syrup (nice!), bourbon and wood. Just sweet enough. Groom is grooving on this too—sharing.

Backwoods Bastard pawelski

Let it warm so the malt flavor blossoms. (Colder, it borders on jet fuel.) Alcoholic, wood, bourbon, raisins. Want more of a malty backbone. Previously gave this a five but I’m missing the caramel and vanilla and subtlety, this go-round (Sept 2021).

World Wide Stout - Bourbon Barrel Aged pawelski

Storm-induced blackout beer, drunk at (our actual) “cellar temp.” Huge bourbon raisin nose. Alcoholic, brown sugar, vanilla, trace cola, bit of throat burn reminds you there are hops involved.

It’s magic! And three years later, it’s a flat-out barleywine. Burnt sugar, dry, warming, alcoholic.
