Cellared 3 years - Pour: dark, unctuous. Nose: coffee, vanilla, bourbon; clove, char, and rubber. Body: silky. Profile: dominated by earthy and acidic coffee, tapering into bitter grounds, ending on a vanilla note. Finish: vanilla-tainted coffee grounds.

Uncellared - Pour: dark, brown heady froth. Nose: smoke, bitter char and rye, sweet rum and brandy. Body: medium, light carbonation. Profile: doesn't quite follow through - earthy cocoa, rum and brandy, char, smoke. Finish: smoky rum dark cocoa.

Cellared 3 years - Finish has shifted from oak to char; otherwise, all espresso notes are there from nose to profile with faint licorice and cocoa. One left in the fridge ... one more year, doubting any maturation.

Cellared one year - Nose: sweetened dark roast, maple, and vanilla (more so that 1yr ago). Body: great body, medium-heavy body. Profile: follows through with the nose, balances bitter char with sweet maple well. Aftertaste: light cherry, maple, char.

Cellared 1 year - Nose: berry bouquet with char and oak, an improvement over the ashen profile before. Body: medium with moderate carbonation. Profile: still bitter, ashen akin to coffee grounds with light caramel finish beneath the aggressive bitterness.

Uncellared - Nose: exactly jam, boubon, peanut. Body: plush carpet. Profile: earthy berry tartness, something tingling along the sides of the tongue like chili but alcholic, too. Aftertaste: berry, peanut, tart; unctuous.

Bottled 18 Nov 2020, uncellared - Nose: acidic, barnyard, lemon zest. Profile: moderate tang, much more earthy than sour; orange and lemon peel, white wine (oddly). Aftertaste: zesty, earthy, residual red wine. Another in cellar.

Bottled 26 Oct 2020 Best by 26 Oct 2021 Cellared 14 months Nose: maintains big maple fudge profile w/ booze, char; astringent. First note has deadened predictably: more milk chocolate than dark, bitter ash, bitter cocoa; gum-numbing aftertaste.

Uncellared - Nose: tart, lemon peel, grain, honey, earth. Profile: well balanced earthy and tart, more of the same above. Another in the cellar - a rarity for me as it's a sour.

Much more espresso character than previous version, which overpowers the base stout. Not as full or rich as before. Didn't buy one to cellar. Had cellared and drunk the previous version, but seems I never checked in to it. Hmm.

Hella juicy, not too sweet considering its 13% ABV. Having two forms of raw beef: sliced with wasabi and minced with egg and garlic. Pray for my intestines.

That's a damn fine crisp pilsner - none too hoppy, sweet, nor malty. Wish it were 40 baht and readily available nationwide. This would be my all-day go-to.

First nose: coffee grounds, toffee, ash. Second nose: spirit, vague fermented fruit. Light body. Taste: strong tea, tobacco, more ashin the aftertaste; light sweetness riding the bitter, malty profile.

Much more subdued margarita nose than lime or prickly pear... the grapefruit is clear and acidity pairs well with the original lime, much closer than pear, which was more syrupy.

Bottled 01 Feb 2021, uncellared: nose of vanilla, cinnamon bark, milk chocolate, bourbon; actually, not too sweet. Taste profile of iced oliang, earth, horchata. Lingering bitter oliang aftertaste. Ordered one for my cellar, but not seeing it.

Cellared 1 year: espresso nose, woody, boozy, light licorice, low sweetness. Carbonation has reduced. On the palate: dark roast, bonfire, bourbon barrel. Light sweetness still present, balanced well with strong sour espresso character. Woody aftertaste.

Huh, very accurate description on the bottle: lactose, cocoa, vanilla, and coffee on a wave of golden ale. Rich and smooth, more bitter than sweet. Masterful creation.

Gave this a 4.5 while high, so now I'll adjust the scale just while inebriated. Still thick and grapefruit juicy, almost pulpy. A bit sticky but lovingly tart.

Whoa... like a DIPA body, then a fruit sourness yet with an earthy aura, then a berry sweetness followed by its tartness. Damned interesting flux between bitter, sourness, and sweet. Hella grapefruit.

Caramel, sprucetips, light bubblegum... pretty complex sounds odd, but works. Taste is very pine sap, damned bitter, wrung a pine tree for this IPA. Tall can would be too much for myself.

Pours like oil. Sweetness on the nose: dark chocolate, roasted coffee beans, light bonfire and bourbon booziness. Fairly heavy body with sharp sourness that peaks at midtongue: filtered coffee, dark chocolate, light raisin. Bourbon biscuit aftertaste.

Untappd says 16.7%, menu says 18.7%... whatever, it's big. Nose: heavy roasted malt, brewed coffee, light raspberry. Beautifully sour berry with a marshmellow sweetness, but coffee dregs slash and burn the palate on the aftertaste. No mercy charcoal.

Unaged bottle: Wax is hard AF to take off! Tequila nose, light coffee, musty. Not too sweet, light body, rum is noticable, in front of the subdued honey, earthy albeit lacking cocoa or coffee notes. Slightly sour/sweet aftertaste, apple.

Bottled 29-Jul-19, cellared 1 year: Nose of rich soil, coffee grounds, and nutmeg. Slight medicinal bitterness on the tonguetip. Medium body and carbonation. More coffee than medicine on the tongue, but bitter prevails throughout. Boozy bourbon.

Sharp americano nose, a bit tart. I usually don't like black IPAs, but this one strikes the bitterness balance between hops and coffee. It messes with my head a bit. An odd one, but really well done.

Year 0: Sour malty nise accented by brewed coffee, low sweetness. Sour and effervescent on tip, the bitterness of coffee slowly climaxes with light sweetness, splaying finally into sour coffee aftertaste, largely on the tip. Light chalk in throat.
