Getting a slight bit tart. Delicious apricot flavors and funk still abound.

Geriatric at this point. Acidity rearing it’s ugly head now. But still always a delight to drink

7 May 2022, 375ml. I really don’t think there’s any reason to cellar them longer than a few years

Acidity is soft as expected given freshness. Bright stonefruit and funk. Tasting mighty fantastic as always.

28 October 2019. 375ml. Super funky, a bit of damp paper, slightly oxidized which adds some complexity to it. Bright lemony acidity, somewhat restrained. Refreshing and lovely.

4 Jan 2018, 375ml. One of my favorite recent bottlings- cherry pie, pie spice, tart cherry skins, funk and a relatively restrained acetic acidity. Cobwebs also in the back. Tannins and cherry skin linger on finish. Great.

10 Jan 2022, 375ml. Tart berries, very seedy, good funk, fairly acidic- but the acidity does a bit better when it has a chance to decant a bit.

6 June 2019, 375ml. Tart cherry skin galore. Moderate acetic acidity shivers the parotids some. Good leathery funk, tons of oak on the finish to help smooth out the acidity. Opens up so much as it warms. Medium body and carb. Just great.

23 August getting pretty tart still. I think this is date specific. So excellent, that being said.

This bad boy has evolved but is drinking so well still. The apricot flesh has matured a bit into peach rings, with a still reasonable mild-medium acetic acidity and lots of funk.

8 July 2021, 375ml. Already fairly acetic, but a nice cherry skin and flesh presence. Leathery funk and tannic oak, medium acetic acidity with a nice lingering cherry flesh and tartness. Medium body and brings the parotids in just the same.

I think 12 August is drinking at its best right now. Not sure how it gets better from today. The best time to drink your 21 Fou is today.

8 Oct 2016, 375ml. Cellar check. Doing well, has added a bit of sherry like oxidation. Brewery funk and cobwebs going strong. Perhaps a bit less acidic than fresh. Good Brett presence. Slightly doughy grain, lemon citrus zest.
