Totally different. It’s amazing what the radikon influence has done to the cantillon, the regular cantillon funk is absent. Stonefruit funk from Radikon is clearly present. Minerally, stonefruit pits, passionfruit. The most atypical Cantillon I’ve had.

Again, super interesting combination with the wine. This time the beer has a lot more wine influence, but it doesn’t work as well. IMO the wine character clashes a bit, and is a lot more harmonic in the wine. Still fantastic.

Lots of Cantillon funk, mineral character and bitterness, not a whole lot of fruit. Really nice, but Blåbær always leaves me wanting more fruit. Photo by Rune B.

Aromaen er helt fantastisk og lukter tydelig av blåbær. 9år på flaske har tatt ut litt fruktighet i smaksbildet, men den føles på ingen måte over toppen eller gammel. Avlutter med litt tørr finish og bitterhet.

Fantastisk Lambic! Fruktig og funky og en perfekt syre som jobber bra sammen med smakene!

Mega interesting. Drank together with Sophia wine. Lots of the tannins come through in the lambic as one might expect from the production method. I love what the funk adds to the grape lees, it’s an interesting and unique blend that respects both products
