Lovely challenging special from the extensive Huis selection. Definitely needing a careful pour. I had until 2041 to drink this but I'm not that patient. I wish I'd had it at the same time as my baked camembert starter. Tart edge to a complex background.
Pours orange hue golden. Sparkling. Nose dry, cider apple, peppery, bright. Flavour super dry and a little funky lambic, very much like a good farmhouse cider. Some citrus lime, orange and lemon peel. Bangs been on my list a while.
It's been a while; forgot how fine Parfait is. Flavour underpinned by a cider/cider vinegar vibe. Dry, DRY white wine and oak. Smooth. Far maltier than I remember - and almost a grassy finish. Daftly poured the sed in, but my fault (and no harm done).
