I set aside a bottle after my 40th Birthday Party to see what 10 years would do. As it turned out we were separated for 11 years. Paler, dryer & a lot less carbonated, the fruit has faded to an in distinct tartness merged with a more prominent lambic.

Det äldsta i kylen förutom några engelska Barley Wines. 2010, gick ut 2015 men riktigt bra ”plopp” i korken och ordentligt skum. Torr, sur, besk, lite körsbär kvar och fin färg. Nog precis tappad när vi var där och fick skutta över körsbärs-säckarna!😂

This is the best Cantillon I have had. It's profile was simple but perfect. Low sweetness cherry pie filling with a beautiful sour finish. Opened it with friends at the top of Ambler mountain (Grande Cache, Alberta) during a hike.
