Lambic - Traditional

Blend of 3 barrels of Lambic maturing in fresh emptied Vin Jaune barrels from Stephane Tissot. Two barrels were filled with wort and one with a two years old Lambic. We let it maturate for two years for the wort and one year for the Lambic. Beer bottled on 27th December 2016.

LVEB/LVES 2016. Très légère acidité à l'ouverture de la bouteille, s'ouvre avec le temps. Le côté vin jaune est encore bien là, épicé, un peu gras, le lambic est un peu plus présent en comparaison au batch 2019. Excellent !

Even though I've never enjoyed this one before, it's taking me right back to Belgium. It starts as bright apricot lambic might, but w white grape & oak & minimal funk, but then emerges some more savory elements: walnut, nougat and even gooey caramel.
