Cantillon Racine sur Lie is a 2 year old Lambic blended with Chardonnay, Tokay, and Sauvignon Blanc grape pomace. It was created in collaboration with Radikon, a winery in Oslavia, Italy. For the Racine sur Lie, 5 liters of fine lees were added to a single barrel of the lambic that was maturing as Racine. It was bottled without any additional blending. The label is a colorized version of the label produced by AmmoAmo and while the coloring is reminiscent of the Union Union Saint Gilloise football team, it is actually an homage to another Radikon bottling, the Radikon Risvera, which had a similarly colored label. It's raining sure lies... and it's just raining. Saurkraut. Acidic. Pepper and spicy grape pomace and peel funk. Very mineral and earth. Sourish. Vinegar.

God bless the lambics with blends of white grapes. Grape must and fruitness. Beautiful funk. Grape must, spices, lots of vinous notes. Huge potential, huge complexity already now. Beautiful brew. Beautiful blend.
