We felt this obscure Lithuanian farmhouse best expressed the intersection between the culinary & brewing arts. We began with a small Golden Promise mash and baked it in our pizza ovens until it was deeply caramelized and lightly charred. Then we added it back to the main mash consisting of a complex blend of high-dried and roasted malts. This beer style is “raw,” meaning we did not boil it. Once in the fermenter, an expressive Lithuanian farmhouse yeast went to town on all the rich sugars. The result is complex with rich notes of bread crust, toffee and dark treacle with Belgian-esque yeast note.

A keptinis! This is roasty, bready & caramelly, a bit light bodied & finishes dry. The raw ale character underpins the roast & caramel notes. Unusual, interesting & well done. Thanks, Sam & DFH for brewing this off-centered Lithuanian farmhouse ale.
