Last bottle aged 7+ years. Certainly has oxidized, Belgian yeast and vinous character remains. Alcohol almost imperceptible.

Less complex than I expected. Maybe 10 years is a bit too much aging?

Just passed 10 years cellared, and it’s not often I get to say it was a success. No off-flavoring or oxidation. Vinous, champagne, grape nose. The funkiness has mellowed and this is like a soft honey-sweetened grape-forward champagne.

Honestly wasn’t sure what to expect. But this held up very well! Sweet honey and champagne notes are super prominent
