Rundere end old school lambic. Frisk og frugtig med god sødme og ikke særlig meget stald. Vildt let at drikke.

1, 2, and 3 yr old Lambic aged in foeders used for white vermouth. Classic funk flavors of the style.

Drinker beware! I was taking the cage off the bottle, and the cork damn near took my head off. Had to pull off a whole Matrix move to get out of the way! Oh, she bottled conditioned fo sho!!!

It starts with a nice lemony, wet blanket, funk. It's a little tart and fruity with some apricot and woodiness. Im not getting any vermouth but I assume the fruity notes are the result of that. Tasty!

Tart funk up front that quickly fades into a dry white grape with some sweetness and oak notes.

Finally getting around to “The Man in the High Castle.” Dry, tart, vinous, bitter citrus pithiness, and a touch of mellow oak. Fantastic. The cork popped itself out!

Very different with the aging method! It adds a bit of funk. Light and mildly sour.

Slightly funky but mostly just low key fruity. Lemon and grape, but not sour. Endlessly drinkable.
