Draft Belgian Lambic. Boon created a special blend for a kegged Lambic. It’s funky, but the funk is on the low side. It’s lightly funky with green apples, green grapes, oak, a hint of lemon, a few drops of vinegar, and a very mild barnyard funk finish.

Wow. Phenomenal complex fruity aroma. Passion fruit, pear, strawberry, white grape, grapefruit, floral. Balanced sourness with faint malty sweetness. Minimal acetic. Hint of bitterness. No phenolics. Very different than previous experiences.

Heavy barnyard - leather, horse blanket. Hint of tartness, mixed lactic/acetic. Hints of fruit - blackberry, cranberry, blueberry. Hint of floral. Very light body and low carbonation. Needs more bubbles!
