Sophia Lambic (2023)

Lambic - Fruit

A collaboration between Cantina Giardino and Cantillon. A blend of Greco di Tufo pomace and 2-year old lambic. Before being blended with the lambic, the grapes underwent a pellicular in amphora for almost a year. Bottled on 4 December 2023

This one's lovely. Nice spritzy carbonation. Delicate apple/pear flavours with a funky hay-like undertone and light spice notes. Soft acidity. This gave me some less-sour good American saison vibes. Very easy to drink.
