Lambic - Fruit

Lambic blend with blue honeysuckle, or haskap, berries. For the past two years, we’ve been making a fruited blend with Camerise berries in small quantities. These berries are slightly sweet with a beautiful acidity. We didn’t have to look very far for a its new name... a blue fruit that makes a blood-red beer: Sang Bleu. Our friend Ammo has outdone himself once again, creating a superb new label to go with its new name.

I’m at a loss to describe this, some tart cherries with an undertone of peppery arugula. Flavor is lightly tart with the forest flavors never letting this get too tart. Finish is dry and a bit chloroseptic. No other beer like this out there, damn good.

There's a crazy amount of fruit in this one. Heavy tannins from the fruit gives way to a black raspberry-like undertone. Medium acidity that melds together with the fruit perfectly. Really nice.
