This is aweeeeesoeme, negatives, a bit of metallic, positives, it’s the acetic/lactic blend you always dream of but with a sweet rum ginger beer dark and stormy quality in the middle that yields back to Cantillon goodness. What a ride and what a beer.

A perennial favorite, this may need a bit more time to develop some funk and spiciness. Rhubarb and the associated spontaneous notes are exquisite, a bit sweeter, fizzy and bubbly. Final notes of apricot and some aloe vera

Drogone Lambic Tracy

The cherry is fairly aggressive here, not as crazy or aggressive as their kriek, but a mid-range fruitiness with lower phenolic and barnyard notes in the finish though still present. Great bubbles and refreshing qualities, ends with a bit of bitterness.

9yrs old and it’s still a boozy one. A bit of caramel and toffee but oxidation has set in and there’s not much left here.

World Wide Stout (2013) Tracy

Just shy of 10 years old this is an absolute treat. Some sherry and papery notes coming in as oxidative complexity but tons of chocolate peanut character amidst a subtle sneaky boozy character.

Gueuze Loerik (2019) Tracy

Aroma and flavor are awesome—herbal orange Campari vibes with no sweetness and a big tart lacto and pedio note adding some stone fruit and honey notes. I miss the carbonation but also appreciate the story behind how this comes to be.

[basement office chair] aroma is real unique, pickle brine and dill along with peppery arugula, orange juice, and maybe some cashews, very subtle. Drinks like wine with some mimosa vibes and a bit of that herbal goodness in the finish.

2022. [basement couch, back wall] Aroma is pretty subtle, some pomme notes and a light bit of citrus. Flavor also subtle—undercarbed and luckily a saving throw of farmhouse herbal flavors to keep it alive.

[dining room, screen right] Aroma is halfway between a french cider and a pinot grigio. Bright lemon and lime citrus margarita at first that fades into a funky dry pomme fruit infused flavir with a bit of crispy wheat baguettes.

Tyrnilambic Baie d'Argousier Tracy

[Outside kitchen, other lounger, w/Jeremy B. ] Arom is a real unique, a sharp buteric peach eucalyptus nite with also oramge zest and grapefruit. Flavor is a lot more herbal and of the forest flavors with orange and lychee as well. Very unique.

Sang Bleu (2022) Tracy

I’m at a loss to describe this, some tart cherries with an undertone of peppery arugula. Flavor is lightly tart with the forest flavors never letting this get too tart. Finish is dry and a bit chloroseptic. No other beer like this out there, damn good.

Aroma is roasty coffee and the flavor is toasty coffee. It’s effortless for the ABV and cohesive. Not aggressive or anything just delivers exactly what’s promised.

Flavor of brown sugar hits early though it’s not sweet by any stretch of the imagination. More breadiness comes in later with the spice bill that includes nutmeg and vanilla as far as I can taste. For my one pumpkin beer of the year I may consider another

Intense aroma of sweet onions, champagne vinegar, kumquat, and pears. Flavor actually has a bit of sweet pear flavor and if bbq lambic sauce was a thing that I could indulge in as a king of a nation I would make it so.

Yes, it’s the 2015. Purchased for my wife while pregnant and she won’t even get it try it now that our son is 7. Smells like lillies and tastes like raspberry frosting. If only my kid aged this well.

Mamouche (2021) Tracy

Aroma has some pickled jalapeño notes consistent with the flavor as well. Plenty of oak and a little warmer the tartness is less lacto and more Pedio-forward. Additional funkiness rolling around with maybe a bit of mustard as well. Perfect for nachos.

There is no perfect blend between tart and funky as this. Apricots and peaches with a beach and farmhouse aroma that cannot be replicated.

Wet paper towels, a bit of tartness and funk and when it comes to Cantillon this is on the low end. It’s light and then just drops off a cliff.

The aroma is such a treat, funky peaches and a bit of persimmon with funk. Good bit of tartness and pop of acidity but has that peach skin crisp flavor with some oregano and geraniums in there as well.

Big Lushious Tracy

6-yr old bottle is doing alright. A bit of that olive / soy note sneaks in as it does sometimes with me and raspberry stouts and there is a strange mentos wintergreen thing happening but I’m guessing that’s age. Overall impressed with chocolate/raspberry.

Signature Cantillon rustic flavor and character with a bit of hay and lemon mixed with extra clementine orange and cherry flavors coming through with wood and lemongrass. This is really neat, bright, crisp, and rustic and finishes perfectly.

Kriek 100% Lambic Bio (2019) Tracy

Aroma of cherry pie filling with undertones of wheat and hay, maybe some eucalyptus / urinal puck and thyme. Flavor is cherry and grapefruit with light acidity and a good bit of robitussin kicking it on the finish. Love it all.

Tis boozy. Let’s not ignore this. And it certainly retains its roasty WWS flavor but I’m searching to find some of that utopias in there and it’s not jumping out, more likely from barrel character than beer influence. But still a sipper and a thinker.

The initial tartness of cherries comes in at the beginning but quickly yields to a bitter herbal and woody note, and then after that just let the complexity do its thing.
