Collage De Coupage

Farmhouse Ale - Saison

Utilizing the traditional French method of biere de coupage, this saison brings together a young beer and an aged beer. We began with a saison-style ale using an expressive Lithuanian farmhouse yeast, a classic malt bill of pilsener malt, malted wheat & malted oats & Saaz hops. We then selected some of our mixed culture farmhouse ale aged for 3 years in French oak wine barrels and blended it with the saison. The citrus, spice and white pepper notes of the saison pair perfectly with the bright acidity, brett funk and oaky dryness of the mixed culture beer resulting in an eminently quaffable, complex and compelling ale.

A hint of gose but with the body of a fine wine, this is like meeting someone with the head of an old man and the body of a bodybuilder!
