For those able to navigate by the position of the stars in the sky should be able to gauge my time spent @ DFH today. Seems they’ve finished mashing in… Herbal sage dominates aroma & flavor, with light malt, citrus, and a hint of pine on the tongue.

Citrus & light floral, with a hint of funkiness up front; tart and dry on the tongue from start to finish, with a chardonnay-esque crispness to the mouthfeel. Apple, white grape and a touch of oak all easily identifiable.

Oh my… Look what DFH “found” sitting in the back of the beer cooler - On tap this evening @ the brewery. A 9,000 year old recipe that’s rested for 9 years has wonderfully blended & ‘complexified’ the honey, barley, grape must & fruit it was brewed with!

Bright ruby red pour w/a sparkling off-white crown that quickly fades to oblivion. Viniferous…raspberry & slightly acidic to the fore; sour - but not overpowering - on the tongue w/more berries, lemon & a splash of Chardonnay; finishes w/a touch of funk.

Jet black pour with a thin fluffy tan crown that’s easily rejuvenated with the swirl of the glass. Deeply roasted malt leads; taste follows, with a creamy full mouthfeel and a solid roasty bitter bite that asserts itself from start to finish.

Malt forward, with some light pine, and a touch of citrus to the fore. Solid bitter bite leads on the tongue, citrus makes an appearance as the initial bitterness fades; crisp, slightly dry finish.

Beautiful golden-yellow pour with a firm white crown; juicy citrus & tropical fruit with notes & flavors of pineapple, melon, peach & orange. Creamy smooth mouthfeel with a lightly bitter-sweet finish.

Ruby red pour with a tan crown that quickly dissipates. Cranberry, orange & cherries - as predicted on the label - along with vanilla, toffee and oak stimulate both the nose & taste. Medium-bodied mouthfeel, with a slightly tart, alcohol warming finish.

Bottled: June 2018. Regretfully, time was not kind to this little fella… Heavily oxidized, muddy brown pour w/some fruit sweetness & a hint of alcohol warmth. “Fruit-y”, but individual fruits are undistinguishable; drinks like an old ale… Which it is.

Utopias Barrel-Aged 120 Minute IPA F
LCI from earlier in the week. Deep copper pour with quickly fading off-white crown. Bourbon, oak & caramel dominate aroma; taste follows with vanilla, brown sugar, a touch of citrus, pine & distinct alcohol warmth from the otherwise well-hidden 17% ABV.

Live Christmas music w/Jeff Evans; cheers to musicians practicing their craft! DFH ‘Drink Lab’ beer…All the work of continually hopping a batch of beer w/‘Satan’s Saliva’ clocking in at a paltry 3% ABV. My version of an N/A beer; can drink this all day!

Missed national pickle day on the 14th, but grateful the folks at DFH saved me a pour; I think they are trying to make me a lager convert…Keep this up, and they may succeed. Peppercorn, dill, celery salt, & pickle spices; has a sage-esque, clean finish.

Another. Finishing strong. Comparing the draft version with the bottled product. Alcohol warmth is a bit more subdued with the bottle vs the draft. Seems counter-intuitive… …Should sleep well pondering that thought.

Years ago, I brewed a scratch beer that was fermented with Sake yeast that tasted awesome; then watched as some ‘effing “beer snob” homebrew club member poured it into a trash can when he found out it was fermented w/Sake yeast… …Now we have Cold IPA’s.

Went for a walk after work, and guess where I ended up? Nice rye IPA with a sturdy dose of white sage - Moreso on the nose for me; for my perambulatory coxswain accompanying me on the walkabout, it was all in the taste…Couldn’t smell a thing.

Lime, grapefruit & agave sweetness to the fore. Sweet agave nectar leads on the tongue; lime & grapefruit make their presence known as the sweetness fades, with the tequila barrel characteristics rounding out the taste…Medium-dry, slightly acidic finish .

Beautiful mahogany pour w/a solid tan crown. Light woodiness, touch of smokiness & toffee up front; alcohol warmth leads the taste, but quickly fades to reveal roasted malts & dark chocolate. Mouthfeel not as full as it appears; lingering bitter finish.
