Cracking into some of my 6 year old lambic. Starts light, finishes dry with horse blanket and bandaid flavors in the middle. The Brett funk plays second fiddle to the other polyphenol, but still a pleasant lambic.

2014 vintage, as Geuze from BOON, that's the most oaky and Woody from them all, as always another masterpiece.

Very hazy honey color w/ quickly dissipating white head; champagne bubbles. Barnyard-straw nose & flavor; add oak & apricot flavors; tart. Brett yeast creates creaminess; bone-dry finish.

The most expensive beer I have ever bought. I would compare it to jumping into the ocean, it takes a little time, but once you’re in, it’s really good. The last gulp was the best and It paired really well with Gouda.

Champagne flavoring with notes of ground sesame seeds. Savory and a little dry. Drink this with a Chinese chicken salad.

A: musty and sweet. T: acidic and sweet, medium full, chewy. Green grape fruity. Slightest hint of smoke (one or two sips got this), green fruit stem bitter finish.

So subtle for a lambic, really soft with stone fruit and so much barrel present. It’s like a blend of a farmhouse ale and a lambic. Wow I love this.
