Big citrusy, yeasty, green apple-like nose. The palate starts lemony and builds into a strong grapefruity and earthy finish.

Last bottle of this masterpiece. Should I have held onto one until 2036? We'll never know. Anyway it's still delicious.

On est sur pomme, cidre de pomme, citron, raisins blanc, épices, fromage fermier, pain grillé et cuir. Sec, modérément acide, peu voire pas de aigreur. Équilibré facile à boire, une geuze sur la finesse et élégance. Sinon, très belle complexité, prenant.

These Mono Blends are 100% the Boons to go for. Gloriously dry. As they say, clear smoky and spicy characteristics. Red wine tannins. Heavy oaky woodiness, which seems to complement the dryness. Well-aged and very, very fine indeed.
