Lambic - Gueuze

This Oude Geuze is a one-time edition created by Frank Boon and was bottled on April 29, 2019. For this geuze, Frank Boon blended a two-year aged lambic form a brand-new oak foeder (N°83, third filling) with a three-year aged lambic from the oldest foeder (N°79). 'Apogee' means 'the highlight' or 'icing on the cake'.

Open / spontane gisting wordt nog maar weinig gebruikt. Dat en de twee jaar lagering op hout, geeft een bijzondere smaak. Geen toevoegingen, toch mooi fruitige smaak, lekker zuurtje dat lang blijft hangen.
