parcel where the poulsard and trousseau are grown. Pomace. 3 months maceration on the skins. 2 year lambic. Mix of both grapes. Very vinous. Fruity and some sweet and dry tart.

Two yellow wine barrels. Fill one with wort. One with lambic. Let sit for 1-2 years. Toffee nutty aroma. Tart.

Dry, grape, a little musty funk. Fairly light but with a nice depth of character. Moderate tannic character, a little astringent, tart.

Smaking av Levain Savagnin, Cantillon La Vie Est Belge og Tissot Chateau Chalon (vin), samme drue. Levain tørr syrlig eplesidereddik, hazy hvit. Oransj Cantillon mer restsødme, større og rundere, og vinen har den vakre vin jaune-oksideringen. Nydelig.

Smaking av Levain Maceration - poulsard, Cantillon La Corvee og Tissot Poulsard Anfora (vin). Samme drue, der ølene blir nydelige balkongroseer, Cantillon med mer syre og mer funk. Levain lettere, syrligere og mer sidersk. Vin med tanniner. Mmm! 15K!

Sterk fruitig met vooral framboos. Zuur op oud hout war helaas snel weg ebt. Mogelijk verschil tussen fles en tap.
