Iris (2015)

Lambic - Traditional

Instead of using a traditional 35% wheat base, Iris is brewed entirely with pale malt. It is hopped with a 50/50 blend of both aged and fresh Hallertau hops and is then barreled for approximately two years. After the maturation period, Iris is "cold hopped" with fresh Saaz hops one more time before bottling to give it a fresh-hop bitterness and aroma.

I shook up the sediment by accident when I opened it. Dropped the base on the table, and it overflowed. Low sourness, medium funk. Citrus, earthy, wet wood, malt sweetness, present hops that lend a slight bitter finish. Very different cantillon variant.
