Clear amber pour with a thin white head that dissipates quite quicky, and visible carbonation. Notes of old cheese, grape vinegar, grains, caramel, sweaty hops, sharp oak, the characteristic mellow Cantillon funk, some sherry smoothness in the finish. OK

Super acidic at the back of the palate. Clean profile overall with some nice citric and apple qualities. Tastes super fresh given the age. The acidity is slightly overpowering, but it's overall well balanced. Pretty good.

Intense aroma of sweet onions, champagne vinegar, kumquat, and pears. Flavor actually has a bit of sweet pear flavor and if bbq lambic sauce was a thing that I could indulge in as a king of a nation I would make it so.

Gunther Sauvillers

Sweetish, funky, restrained citrus/lime. Medium body, mild sour. Refined. Bitterish, mild sour aftertaste with a strong funky finish. Bit champagnelike and dry too. Awesome beer, love the softness and complexity.
