This is drinking so well. Totally dry with perfect acidity, bright but with good depth, some orange, some calvados character but subtle (less apple than a typical 3F), hint of Boon funk...so good.

BBSN 😀. An extremely dry lambic. Outstanding stuff. It is so dry that the is nothing past your teeth. This reminds me of Korbel(r) Extremely Dry Champagne.

I think this is really hitting its stride at 5yrs. Still lots of carb, not too sour, good funk and light calvados notes. Very drinkable. Might make it a cple more years!

This is superb! Musty attic, lactic acidity, some green apple brandy, oak.

Totally dry, grapefruit bitterness, only mild barrel character, mild funk, this is excellent.

This developed amazingly. It's gotten super juicy and round light acidity with the cheese rind calvados intact in center of finish.

Fantastic body, very soft and rounded acidity, deep minerality and crisp green apple character - tannins and all. Lovely.
