Doom (2017)

IPA - Imperial / Double

Doom may be impending but that doesn’t mean you have to fear it. A collision of worlds, the intense hop character of our imperial IPA mingles with the warm vanilla and oak notes imparted from time spent in our favorite bourbon barrels. Like all good things, Doom comes to those who wait.

It was a little malty but at the same time very well balanced. It aged quite well. Thx Paul, Thx Scott.

Cellar find! 7 years has left this void of flavor. Surprisingly, the hops profile is still slightly there. No bourbon to speak of.

Well, here we go…… That’s surprising. The hops are still there. Really smooth. Bourbon is pushing throughout but is more balanced. Aged very well.

DOOM. Big malty ginormous brew. Thick and chewy goodness.

Cracking open some forgotten cellar bottles. Past its prime but still a lot of barrel notes.

Drank one in 2017. Was not a fan. Has mellowed out and is actually very delicious. Almost hoppy barleywine like. With some mild bourbon oak and vanilla. Paired with a partagas cigar. Tomorrow deal with the devil day.

Good notes that remind me of what this beer used to be, but I don’t think an ipa from 2017 was meant to see 2023. 3.5 out of 5 today.
