Peach/nectarine, light floral notes, salinity, hay, citrus. As it opens more cheese rind and leather. Beautiful bottle but could easily go a few more years for the base lambic to develop and meld. Felt like a Vig kind of night!

Gueuze 100% Lambic Bio (2016) Beraha
Weird experience here! Was bottled without a cork (!), which has helped provide some oxidation, though far off from being bad. This one is weirdly extra dry, musty, and brett-y with funk that’s almost overpowering. Slight plastic-y aftertaste.

Interesting to have Cantillon’s take on a “draft gueuze” - pretty spot on for the real deal, excellent base lambic as always.
