Bottled February 7th, 2022. SUPER vegetal - nose is almost all cauliflower. Taste is vegetal with some funk and tartness. I've heard Racine is hit or miss based on bottle variation. This was a big miss.

The Christmas Day tradition. Really good fresh. Ton of fruit and funk.

Banging. Barrel is much more prevalent than fresh. Nice toned down acidity.

Utopias Barrel - Aged World Wide Stout (2021) Gargiulo
Holy jesus this is a big beer. Nose is a big bouquet of sharp, boozy dark fruits. Tastes like a barleywine dipped in dark chocolate. Definitely a sipper but very enjoyable. Thanks Ehrlic L.

Old Iris = Great Iris. Funk has almost completely taken over. A tiny bit vinegary in the nose but very little tartness.

Nice to finally try a GCB with carbonation. Minerals and a touch of sulfur.

Wow this is still spectacular. Ton of apricot and very restrained acidity. 18 months in the bottle let the funk come out a bit more than fresh.

50 Degrees N - 4 Degrees E (2020) (Cognac) Gargiulo
A big improvement from the last (brandy) batch. A nice sweetness/rounding of the classic Cantillon lambic profile. Could be amazing in a few years.
