Orange, cloudy. Nose is fresh grapefruit juice, fresh green apple lambic, cheap smooth leather, fresh cut grass, mint. Taste is negroni orange slice, lightly tart, bitter. Still a lot of orange. Drying bitterness. Some alcohol. Quite fun.

Bottled 03 September 2021. Dark orange, clear, no head. Nose is nice warming wood, mirabelle, tannic dessert wine. Taste is smooth, tart. Dried grapes, vineyard peach skin. Subtle oxidation. A hint of vinegar.

Dark amber, almost brown, clear, no head. Nose is prune, oloroso, nice dark wood, brown mirabelle. Leather and condensed milk. Taste is smooth and heavier, soft, tannic, wood. Long lasting. Some very shy acetic waves. Red fruits sheets. Close to a Madeira

Dark red, thin white head. Nose is deep dark violets, parma ham, forest moss. Big horse funk. Taste is bone-dry, red currants, astringent yet well developed fruit. Really good, really fun grape lambic.

Bottled . Deep dark ruby red. Nose is like a fruity Carignan red wine, kefir leaves, even a bit of chocolate as it opens up. Dark wood and subtle funk. Taste is thick, dry and very fruity. Tart but not too much, balanced. Better than I was expecting.

Bottled 25Aug22, 1½ month old. Vivid orange, almost copper, cloudy. Nose is strong fresh apricot, dried apricots, sweet marmelade, herbal hops, subtle funk. Taste is tart, chewy, fruity, a hint of caramel, soft candy. Highly crushable.

Light amber, clear. Nose is Alsace orange wine, floral and lightly tannic, green apple, lovely light farmyard funk. Taste is silky, tart, dry, softly tannic. Juicy orange, a bit metallic. Sweet feeling. Fun.

Bottled 14 February 2020, 2 years ago. Light, very lemony, mineral, dried grape skins à la Vin Santo. A very special beer, for multiple reasons, in a very special restaurant.

Jonge Spontanale 4 Month Cheminée
5 years old young lambic/spontanale. Bière douce à la robe vinaigré. Libère de beaux arômes acidulés, le vieillissement en chêne offre une rondeur et vient casser cette acidité.

Bottled 15 October 2019. Perfectly clear, orange wine color. Nose is old, beautiful funky cider, leather, dark apple compote. Taste is full, smooth, softly tart, tiny carbonation. A bit short, highly easy drinking. Very elegant, better than I expected 🌈

Tyrnilambic Baie d'Argousier (2018) Cheminée
Very peculiar sulfur, manure, big dry smoky funk, woody like green stems. Taste is surprisingly juicy and fruity, orange. It's astringent like a thick skinned berry. Incredible balance and blending of the flavors. Leather, smoked meat.

Bottled 3 Nov 2020. Light, rose, floral. Dry, minimal tannins. After a while, a bit salami taste. Or rather boar saucisson. It is good but not as fruity as Saint Lamvinus for example.

LCI. Cherry tart, almond, soap. Something violet about it. Very dry, not too sour. Something grassy, floral. Good year!

That's a special one. Beautiful pitch black color, lighter foam. Some acetic smell, even a bit of lemon. Some of that herbal feeling. Cacao. Some leathery black cherries in the background. Thin and astringent af. Intense tho. Let it breath, let it age.

Same look as 2019, thicker head. Nose is more herbal, grassy, hinting at less ripe fruits. Taste is also a bit more green and astringent. Marked notes of cinnamon. Sweat. Less of a liquid dessert. Dry and drying. Still great.

Such a classic ❤️🍒🇩🇰 Starts with a thick pink head, lot of carb that dissipates quickly. A beer that needs to breath to let the oxidized, leather notes rise. Fruit is just fading, brown candi. So thick and tannic. Low sourness, oak.

Fluffy head, between pink and dark purple. Big banana nose on this one at the beginning 🍌 Over sweet, juicy, black cherries. Highly fruity. Mouthfeel is just as great, light a cherry fromage blanc. Leather style aromas rising at it opens up.

From cerca 2016? The orange is very zesty and bitter, the beer has started to oxidize a bit. Light, goes well with light desserts. The funk is on point 👌🏼

Pure beetroot smell, full of earthiness. Gorgeous color. Raspberry, tart. It works and it reminds me of À Tue-tête of course 😋

Huge almond and chery cake. Thick, nice pulpy body that balances the marked tartness. Lots of wood, vanilla. Not much funk.

Super musty, smells like a damp cellar - must be from the 100% 3yo lambic and maybe the chestnut barrel. Light, dry, tannic. Red wine. Intense funkiness. Sweat.

Danish TIPAs. This one is weird. Smells like fresh malt being mashed. The hops are rather discreet, dank, mint, grassy & piney. A soft astringency that makes the beer feels dry. A very different take but I like it too

37.5, 2016 vs 2017: Super fresh framboise, clear, light and sharp sourness. Some vanilla. Exactly what I would expect from a fresh batch. Not as long and complex as the 2016.

37.5, 2016 vs 2017: Still fruity but not as much as 2017, darker notes, very light caramel, malt. Hazier and less rose than 2017. Some cellar notes, leather, spices. Lemony sourness. Perfume notes developing after a while. This one is glorious.
