Gueuze 100% Lambic Bio (2020) Novielli
Classic gueuze. Good to taste a nice one again. A bit cold on draft. Leather, brett, funky, grapefruity. Highly tartness.

08/20/20 check-in. Loads of green apple, white grapes, some hints of lactic bacteria but way less than six months before — I’m sure it will adjust for an even better taste in a year. Somehow flat, moderately funky, so dry. 4.30

08/20/20 check-in. Held up greatly. Needs to sit in the glass for some minutes, then goes open wide. Tart and acid, going a bit smooth by years, leather, blanket, grapefruity, still sharp and sour on finish. 4.60

Cantillon Chardonnay (2018) Novielli
08/21/20 check-in. Interesting wine-lambic hybrid with the balance pending toward the wine. Actually it could be difficult in a blind tasting to distinguish from a natural wine. Anyway it has a great complexity. 4.35

Zwanze 2018 - Manneken Pise Novielli
08/21/20 check-in. Most outstanding Zwanze ever? Hyper balance and depth. A mineral film on the surface, white grapes, tart, sour-ish, small grapefruit, and the most clean lambic mouthfeel. Great.

Except a small, tiny lactic bacteria note, it is great. Amazingly vinous, funky, mineral, without being too harsh or dry.

Camerise Lambic (2019) Novielli
Very unusual fruit that gives a sweet blackberry/rhubarb taste. Acidity is not so pronounced, just a light body and a tart sourish finish afterwards. Good fruit dryness persistency tho. Clean indeed.

Such a beautiful wine/lambic hybrid. Powerful red grapes, some floral note like rose petals, warm-ish with tannic vinous finish. So tart and dry, super dry. Solid and drinkable.

Near the perfection of grape lambic. The aging is impressive and flows in the glass with an amazing foam. Tart cherries meat, grapes, some hazelnuts from barrel, acidity is balanced, tart again on finish and a delicious smooth body. Love it. 4.90

CLAC! (Trois Cépages) (2019) Novielli
Needs to adjust a bit, for the slight and thin lactic bacteria note, but apart from this it’s a grapes SLAP onto your mouth. Delicious meat and juice part from grapes. Loads of dryness.

Just very slight sulphuric at the beginning, then the beer opens and it is a DARN elegance monster. It goes with a sweetness from the pomace, then a complexity like a gentle oak, mild acidity, white wine, sweet wine, body is light but finish amazing. 4.60

Classic gueuze oriented on the leather, Brett, tart, sourish, and grapefruity jam. Elegant, a bit smooth, grassy, thirst quenching.

Wow. Super clean flavor. Minerality. Grape peel, sweet wine, white wine, golden apple. Super dry and tart.

Never had a spiced lambic like this. A bit weird. Some dish detergent, cumin/cardamom. Totally tart and absence of balance. Not my cup of tea. Full of astringency in the aftertaste.

Thanks Mat! Amazingly aged. Still some fresh cherries meat. Funk, Bretta, horse blanket, damn good with an axe instead of the tartness. Lovely.
