CLAC! (Trois Cépages) (2019)

Lambic - Fruit

Cantillon CLAC (Trois Cépages) is a blend of 2- and 3-year old lambics with Cinsault, Alicante, and Carignan grapes. It is bottled in 75cl bottles and made its debut in 2020. The fruit concentration is 300 grams per liter of lambic. The acronym CLAC stands for Cinsault, Lambic, Alicante, and Carignan, denoting the three grape varieties (trois cépages) and is the first Cantillon lambic to contain a blend of three different grapes. According to the brewery, each of the grape varieties were macerated separately and then blended together.

Grape fruit leather, carignan red berries, the best Saint Lam I’ve ever had, strawberry/raspberry fruit rollups, house funk, and pomegranate. The acidity is so tame, and the jam is off the charts. Huge thanks Adam. 4.85

Vinous and grape forward. Great character tho. Carbonation is gonna be a thing in the years, maybe? Lots of tannins. Lemonish also.

This one really hit the spot, more mellow than expected given the name and the way the guy behind the bar explained it (a major slap).
