Blåbær Lambik (Blueberry Lambic) (2007) Fong
Thanks Collin A. for sharing. Time has definitely made this more interesting and it definitely held up better than anyone would’ve expected
about 1 year ago
Didn’t bother with a picture but this is great, rhubarb faded slightly but integrates well with the underlying lambic

Very pleasantly surprised how well this held up, could’ve solo’d

Lou Pepe Framboise (2013) Fong
Always had a bad habit of hanging onto these things too long. So acidic.

Gorgeous ruby red pour, shining fruit character, bright acidity

Not one for ageing, cellar time shaves away at the watermelon jolly rancher character I enjoyed in Europe

Probably the most enjoyable Italian grape varietal bottling that Cantillon does

Was much better 1.5 years ago. Age has chipped away at what I thought made the beer a much better showcase for Radikon’s core palate

2+2=5, better than the sum of its Poulsard and Trosseau parts, fun flavor profile that belies the relative seriousness of its wine pedigree

Wasn’t super in love with this bottle but I suppose it’s directionally how I feel with a lot of the wine collabs being done.

CLAC! (Trois Cépages) (2019) Fong
One of the better red wine grape offerings. Sneaky bottle from JVR

Zwanze 2022 - Poivre de Gorilles Fong
Out of all the beers by the bottle I had at Cantillon, the Harambe lambic was probably the one I revisited the most, excellent show of creativity.

Also loved the map label vintage gueuze. Thanks for sharing Hyeonjae J. I’m finally checking in beers!

Liked this with some age, much better than the fresh keg back in Perth for Zwanze 2019

Obligatory bottle at Moeder. I do appreciate Aussie pubs and the amount of hot food options available more after Brussels.

Guess I’ll just do LCI of everything I had in Europe six months ago

Very savory with high salinity. Poulsard is very light but permeates the palate. Reductive on open.

Has improved since I last tried it but still has some ways to go. Not a lot of length

LCI - new job celebration beer. Better than the Besk keg by far but the fruit levels squash all presence of the base beer. Acid is expertly kept in check by the vanilla sweetness though.

LCI - fake Zwanze celebrations. A year and a half since bottling and this is amazing. So well integrated with an abundance of tertiary characters to explore.

Reductive nose that blew away with time, what is left is gorgeous and evocative- but I wonder if others are treating this with the patience it deserves.

Forgot to check the date but I’ll follow the lead of the other nerds that checked this in at the same venue. Reductive nose but not as pronounced as Sophia. Light on its feet.

Keg, possibly the same shipment as Zwanze 2019? Not tasting top- same issues as the taps pouring last year. Bottle is much softer.
