Lambic - Fruit

Cantillon CLAC (Trois Cépages) is a blend of 2- and 3-year old lambics with Cinsault, Alicante, and Carignan grapes. It is bottled in 75cl bottles and made its debut in 2020. The fruit concentration is 300 grams per liter of lambic. The acronym CLAC stands for Cinsault, Lambic, Alicante, and Carignan, denoting the three grape varieties (trois cépages) and is the first Cantillon lambic to contain a blend of three different grapes. According to the brewery, each of the grape varieties were macerated separately and then blended together.

Zwanze2020. Druvfest åt det röda hållet i gränslandet mellan lambic och vin. Nedtonad smakprofil, poppar inte riktigt. Här finns både funk och strävhet från rödvinstaninerna, och i slutändan en lite bråkig stickighet. Rödvinslambic gör det sällan för mig.

Zwanze 2022: connubio di uve che trova nel tannico la sua specialità. Frutti rossi e un retro di zenzero e sentori che portano a chiodi di garofano. Sebbene la sua struttura non mi porterà mai a grandi bevute bisogna riconoscerne l’equilibrio.
