Seems like about 5 years might be the sweet spot for aging these beers, non-BA versions anyway. This is complex and delicious with almost no detectable booziness.

Leading up to 10,000, as I probably won’t have access to anything special at that time, I’ve been cleaning out the (small) cellar. For a Cantillon beer (and one I transported across the ocean and sat on for several years), this is not one of their best.

Wow eventually this really improved. I’m sorry now that I wasn’t more patient in aging these.

Zwanze 2022 - Poivre de Gorilles D
Can’t neglect to check this one in. Absolutely fantastic - the pepper works exactly as I hoped it would. Great idea and perfectly executed.

Starting off with the really good stuff so that I’m enjoying it with a clear palate. Can’t say this is all that different from other Cantillon geuze I’ve had but when talking about such beer that’s never a bad thing. Deliciously tart and complex as always

Bit of a splurge for unique checkin 7000 and to punctuate a hell of a week (and I guess year for that matter)

It’s impossible not to feel a bit romantic about beer after a tour of this place.

Very good - more sweet, a bit like cherry pie, compared to the kriek yesterday.

Another bucket list brewery. After drinking a bunch of gueuze lately, I stand by my initial take on this from years ago: still the best I've had.

Was something wrong with the bottle? It was completely flat. Like, poured as if it were a glass of white wine type of flat. And just nowhere near their Classic Gueze or other good examples of the style.

The late night dessert beer I needed, thank you Ian S. Easy to drink but for this style I’d actual prefer some of the spices and heat brought out more even if it becomes more of a sipper.

I Remember My First Check-In - Rehoboth Brewpub D
Easy drinking with a noticeable influence from the cider. Still can’t believe I never saw one of these beers from any other brewery out there - only got to try one thanks to Ian S. saving one for me.

Well there’s certainly maple. And fudge. It’s tasty but it feels kind of unbalanced and out of whack, and the barrel disappears.

This has held up amazingly well given the age. Roughly at the same level it was 4 months ago.

I think this might be losing a little something with age, but still enjoyable. A far cry from drinking dogfish beers with Ian S. though

Thought I’d like this more, but still a pleasant surprise to find here so I’m not complaining.

Delicious roasty stout. Not sure how so much flavor and body was packed into something 5%

This is a serious situation at this point in the night. Like eating fruit soaked in grain alcohol, if that tasted good.

Either I’ve burned off everything on my tongue or this smoothed out just a bit in 5 years.

Tastes exactly like the 2016. Glad I didn’t try this fresh...

Wow - lots more fruit, but well done, not overly fruity in a sweet way

Smoothed out a lot over the years - really good, drinks way under the abv
