Sept 4, 2018 bottle. Aged like a dream. Tartness in check and super zippy. Hefty barnyard funk and straw. Bright citrus. For a $20 LCBO shelfie back in the day it’s a winner through and through.

Smooth. Refreshing. Sweet? Kind of doesn't seem like words that should apply to a lambic though?

Funk. Goats. Damp straw. Apricot. White grape skins. Pink peppercorns. Waxy yuzu peel. Raisins. Clove. Cooking apples. Dry tannic acidity but no harshness. Surprisingly high bitterness that lingers for quite a long time. Complex but light and not fussy.

From a few nights ago during a distanced hang with a friend and I just remembered to add now. Time did this beer some good.

Decided to bust one out. Light and delicious. Fruity notes. Reminds of white wine. The slight acidity level is enjoyable. Dry finish. Obviously an entirely different level.
