Bottled: 29 December 2022 A collaboration between Cantina Giardino & Cantillon. A blend with the pomace of Aglianico grapes and 3-year old lambic. Before being blended with the lambic, the grapes underwent a 3-month pellicular maceration in chestnut barrels.

Power of suggestion (“chestnut barrels”) perhaps but I am tasting chestnut (esp. finish), along with wild huckleberry / salal berry and a bit of the earthy tomato/grapefruit enigma. Mostly wine flavor I’d associate with grenache. Balsamic. Fuckin fabulous
