Rich, thick fruity berry juice. I get some vanilla notes. More sweet than sour. Color is bright and opaque. This one is growing on me. Glad it’s seemingly part of the regular rotation now.

Love this beer, a lot. Awesome juicy, sweet red grapes. Soft black peppery spice. Tart, layered, briney Brussels funk. Perfection in my book.

Bottled less than three months ago. So good this young. Color glows, tart cherries pop, spicy, bright and acidic, soft Brussels funk.

Fruity and bright, tart, balanced sweetness and acidity. Color is stunning after just two months in the bottle. Light carb dissipates quickly.

HORAL's Oude Geuze Mega Blend (2022) S
Awesome blend. Super fruity, tangy green apple skin and lemon rind. Frothy, lasting carb lends it a full mouthfeel. Funky, black peppery. Still fairly young so some slightly sharp edges but excellent nonetheless .

A real pleasure to try this, at this bar. Similar to standard Cantillon gueuze but a bit more barrel, I think. Some vanilla oak and a nice tart apple/stone fruit acidity. Black pepper. Brussels briney funk beneath it all. Served at cellar temp. A+.

This beer never disappoints. Rich and sweet red cherries, peppery spice and tart, soft acidity. Color is glowing and beautiful. Perfect beer for a moody, foggy winter night by the ocean.

Cuvée Saint-Gilloise (Champions) (2023) S
Fruity and funky, Brussels brine, and a floral nose. Dry hop really pops when this is young. First bottle with the new label I’ve had. 🎄

I’ve only had this lambic a couple times, one of the only “regular” Cantillons I’m not that familiar with. It’s really nice though, bright and fruity, medium acidity, green apple and oak. Cantillon brine. Thin mouthfeel due to light carb. 2022 bottling

Fresh Fou is always $$$$$$. Bottled 8.16.23. Prickly stone fruit, briney under-funk, kiss of oak. Gonna crush a dangerous amount of lambic during the next week or so. Yuh.

Consistently my fav gueuze. Funky, briney, overripe green apples, white grapes and oak. Cantillon gueuze never disappoints.

Cuvée Saint-Gilloise (Champions) 2022 S
Om. Super fruity and tangy. Dry hop on recent batches seems more prominent to me than I remember it in earlier vintages. And I’m A-OK with that. Less lactic acidity too

Cantillo Cuvée Des Champions (2021) S
This tastes completely different to me than regular St. Gillloise. Way more fruity, big dry hop flavors, smells and tastes like ripe plums.

First time I’ve had this bottled, and I liked it a lot of draft but this is better. Fruit flavor seems richer, stronger, like a combo of raspberry and blueberry with a floral finish. More sweet than sour, less acidity than I remember.

Grand Cru Bruocsella Brut Bxl Beerfest V.2022 S
This is a crazy blend. So much oak, vanilla and a hint of caramel. Tart and funky, sweet apple juice, soft cognac notes.

So good. Rich red grape, soft funk, juicy, tart, vinous, black peppery spice. Nice, bright pinkish-purple color. Bottled Oct. 2022.

Really fruity, fruit punch and Sweet Tarts flavors. Soft malty sweetness. Briney funk.

First lambic of vacation week. Not the last. Tangy, briney Brussels funk and more melony dry hop flavors than I usually get from this beer. Never had this vintage though so maybe this was a good year.

Kriek 100% Lambic Bio (2023) S
One of the few Cantillon beers I will always drink fresh rather than aging it a bit. A perfect kriek IMO. The fresh cherry is tart and sweet and spicy in equal parts. So good.

Love this beer. Jammy and vinous, bit of Brussels brine and soft funk. 👌🏻

So juicy and bright. Tart raspberries and soft funk. Big tangy lactic acidity. Glowing red rich color. This beer is so good fresh.

Haven’t had this one in a while. Maltier than most Cantillon, a hint of tea flavor, tart and briney and funky. Quite fruity too. Nice beer.

Tyrnilambic Baie D'Argousier (2021) S
Big, tart lemony lactic notes. More acidic than mostly Cantillon lambic, from the berries. Prominent Brussels briny funk. Strong, lasting fine carb. Good stuff.

Grand Cru Bruocsella Lambic Bio (2016-2017) S
Every time I visit Belgium I only want to drink Cantillon for like weeks after. So, I’m popping cellar bottles. Always enjoy this one because it’s so different than most lambics. Lack of carb makes for a very different mouthfeel. Fragrant and funky.

Super juicy and tart and acidic. Great natural rhubarb flavors. Last lambic in Paris before a flight home early tomorrow. What a week. Much love to Paris and especially to Brussels.

Zwanze 2022 - Poivre de Gorilles S
This is more peppery than I remember on Zwanze Day. That’s not a bad thing, and the lambic works well with the black pepper. But it’s more notable to me.

Drank a lot of great lambic this past week, but this one is the winner. Perfect beer/wine hybrid, for my tastes. Juicy but not too sweet, clearly red wine influenced but not too vinous so you don’t know it’s a lambic. C’est bon, indeed.

One of the better white grape lambic blends from Cantillon. Not as sweet as some others, which is a good thing for me. Has a bit of a floral/herbal aftertaste, almost like a spirit barrel but I think this only aged in neutral oak.

Sick Paris Beer Week Cantillon event. What a list. This is great. Super fruity and juicy. More tart and juicy than vinous. So smooooth.

Tart, tart, tart. One of the more sour Cantillon lambics. Juicy and slightly herbal/floral. Beautiful glowing color.

This one basically tastes like slightly tart wine. In the best way. Big merlot-like red grapes, mild peppery spice. Tannic and slightly bitter finish. Awesomeness. So spoiled with unbelievable lambic this week.

50 Degrees N - 4 Degrees E (2020) (Cognac) S
Always love this one. Big woody oak notes, vanilla on the nose and on the taste. Cognac is there too, and it complements the funky tanginess well. 50N with a view of the Eiffel Tower under a rainbow?? Fuck, man.

This one is great. Jammy and sweet, tangy and tart, color is bright but clear-ish. Black pepper spice. Bit of Welch’s grape juice flavor, in a good way. Fizzy carb dissipates very quickly.

Gueze 100% Lambic Bio (2023) S
Gueuze with a view. Purchased at the brewery today, crushed en Paris. I never don’t appreciate lambic but visiting a spot like Cantillon just reenergized that respect. ❤️

Blåbær Lambik (Blueberry Lambic) (2022) S
Really tart and juicy. Acidic and prickly berries. Tart and tangy with a bit of funk. Nice dark ruby, nearly opaque. Enjoyed faster than is ideal at the source because I gotta catch a train.

Happy place gueuze. I fuckin’ love this bar. My fav spot in Brussels. Perfect for rainy day imbibing.
Nice sweet white grape flavors, tart but balanced due to the juicy sweetness from the grapes. Almost a bit of stone fruit juiciness. Briney Brussels funk is there but it’s subtle. Nose is white wine and Brett.
Really sweet and tart for a grape beer, tastes like berries more than grapes. Some distinct Cantillon funk. Color is very light, clear pink, different for a grape lambic.

Absolute 🔥 wine-ish lambic. Tart, vinous, peppery spice, rich grape sweetness and a bit of briny Brussels funk to balance it all out. Color is glowing and beautiful. Fizzy carb that dissipates fast. Psyched to find this one in Paris.

Gueuze 100% Lambic Bio (2008) S
Well shiiiiit! Fucking jackpot of a bottle. So delicious. Carb is minimal but it’s there. So tart and funky, green apples and white grapes. Briney Brussels tang. Reward for a long week. This bottle has been waiting for me for a long time. Grateful.

Long work week in Miami, finally home so breaking out a celebratory bottle. Definitely get some nice sweetness from the brandy barrel. Soft oak, tangy, briny Brussels funk. Almost no carb at all after the initial pour.

2018 bottling. Lots of port barrel, spirit flavors are very much present. Fruity and tangy, some notable vanilla/caramel from the oak. Awesome blend that gets some unique flavors from the barrels.

Geuze Mariage Parfait (2014) S
Had a bunch of these in my cellar for years, this is the last one. Eight years on and this is still great. Tart and funky but smooth and oakey as well. Bit of a boozy finish.

Crazy how bright the color of this beer is when it’s still fresh. Berries are just as bright and fruity, juicy acidity. Delicious.

Gueuze 100% Lambic Bio (2019) S
Carb is off on this. Cork didn’t pop at all, and it’s almost completely still. It’s still tasty but I don’t think I’ve ever had an off bottle of gueuze from Cantillon before.

Bought this bottle from Brewer’s Fork shortly after the pandemic shut everything down. Been sleeping in my cellar since. Weird to think of those early days.

So good. Tangy and briny, a hint of tropical fruitiness on the finish. One of Cantillon’s most unique beers and always one of my favs.

Trademark briney Cantillon funk, spirits on the nose and just a bit in the taste. Color is clear gold. Fine, fizzy carb. Tart and complex, layered flavors.
