2024.04.20. Ah.. the scent of poultry farms..! Covered by its wild funkiness the subtle and mild flavors of grapes could be found. Mildly sour, and rather more watery than the last batch. Smooth mouthfeel. Medium-bodied.

2024.04.20. Bottle on 3 Dec 2020. Soft acidity with the flavors of grapes and apple. The overall character of this beer was caramel and apple. Were those the result of the amphorae aging..? Smooth mouthfeel. Light-bodied. Buttery… but why…?

2024.04.20. Too much seaweed characters.. I repeat, too much…! The base was a quite moderate lambic with citrusy sourness and stone-fruit-like sweetness. But the flavors were not so impressive that the seaweed characters overtook the whole palate.

2023.06.30. I detect apple, lime, lemon juice, goat cheese, yeast, and white pepper from this beer’s aromas. The texture was smooth, but it was thin, light, and watery overall. Even the flavor was mild and watery with apple-like acidity.

2023.06.14. Well stored. Full and rich aromas of lemon, orange peel, lemon verbena, wild flowers, herbs, and leather. Smooth mouthfeel. Light-bodied. The acidity and sweetness of green apple, muscats, and lemon juice in the flavors. Drink cold and relax.

2023.03.22. Now it’s called ‘Sang Bleu’. Sweet grapes, cranberry, and nuts in the aroma. Very smooth and velvety mouthfeel. Medium-bodied. Very sweet and that would probably be everything about this. Lots and lots of grape juice flavors. Mild acidity.

2023.03.22. Woah… the poultry odor…! That’s what the brett and the fruits in this beer created, but behind the veil rich and full aromas of grape can be found. Smooth mouthfeel. Medium-bodied. Subtle and mellow sweetness with nutty and old cheese flavors.

2023.03.22. Apricot, flour, elderberry and lemon in the aroma. Smooth mouthfeel. Very light and watery. In the flavor I could detect white pepper, pu-er tea, baked white bread, and lemon water. Dry and crushable.

It was a smooth, dry, and quite funky beer alright, but there was a lack of depth in the flavors which were even not properly balanced, in my opinion. The lemony acidity and earthy sweetness just don’t congeal together.

My friend asked me to bring a bottle of Cantillon because he had the wine which used a barrel of Cantillon beer for its aging. I chose this, and it turned out that the wine used Fou’Foune barrel.

So, the fresh batch of Fou’Foune is this clean, straightforward, and not starchy? I like it! The apricot and funky notes are vivid and invigorating. Smooth mouthfeel. Medium-bodied. Nice acidity with lots of apricot juiciness. Balanced sweetness. Dry.

This used to be one of my favorite craft beers… well, back then I had no idea. However this beer did have its finest moment. Very citrusy and piney, intensive hoppiness. Smooth mouthfeel. Light-bodied. Adequately bitter with grapefruit juiciness.

When I drink Cantillon I feel the sweet flavors of oatmeal crackers and dried malts. This one was not an exception. The kriek character of this beer was smooth, round, and complex with earthy and nutty nuances.
