The cherry here is a little lighter than many others in the neighborhood, but it's extremely smooth.

Really nice, very well balanced, some sugar, just a bit of barrel.

Rich and aromatic on the front end. No real heat from the pepper, maybe a tiny bit on the very back end. In between there's a kind of tartness over and above the lambic. Almost a kind of kumquat citrus peel note? Really exciting, would drink lots more.

Canadian Breakfast Stout (CBS) (2019) Pences
Really nice with some age on it, maple has fallen off a bit but is still there.

This is really delightful! The berries in here are huge tannin and tartness, almost a currant flavor. Totally my jam.

Four came out really great this year. Nice and bright, huge peach flavour.

Classic KBS + hazelnut = yes please! Very good, does a bit of a Nutella thing.

Wow, that's a massive amount of fruit, and the vanilla rounds off the tartness of the fruit. The balance is great.

No carb whatsoever. Big funkiness on an extremely long finish. Not very sour whatsoever by Cantillon standards. Damn interesting.

Once more with feeling, thanks Ajay A. !

At least here, now rebaptized the Sunflower Russian Stout. 🇺🇦 Just a classic basic stout, little bit of sugar, big roast, low ABV.

Great porter base, nice coffee on top, just a hint of spices at the back.

Really lovely session, great citrus and tropical notes.

Really nice NEIPA, not a total.juice bomb in the good way.

Oude Geuze Boon (2018-2019) Pences
Nice, basic, delicious, just what you'd expect.

Thanks Ajay A.! Fruit just starting to drop but still super lovely.

Very fudgey, nice hint of maple. Just barely not too sweet. Very fitting tribute to Mackinac fudge!

KBS Cinnamon Vanilla Cocoa (2021) Pences
Really cinnamon forward, just barely not unbalanced. Vanilla, coffee, chocolate, and barrel all provide nice base notes, but the cinnamon is definitely the star. Sweet, but not too sweet.

The extra coffee here is extremely well done: it doesn't get any off green pepper note at all despite having a massive coffee nose and finish. Really great.

Really subtle grape in this, despite the bright red color. Very nice tannic finish, grape skin. All these wine varietals are just so good.

Lambic Grenache Blanc (2021) Pences
Really fresh white wine flavor, crisp, tart, green apple.
Maybe the best white wine-style lambic I've ever had. Grape pomace stayed in amphora for 6mo before meeting the 2yo lambic.
Almost on the borderland between light wine and lambic: you might be able to sell it as a natural light red, like a Beaujolais.

I think this is my first of the new label! Still young, but damn tasty.

Oude Geuze Boon Black Label Edition N°6 Pences
A really nice, very soft gueuze, great balance and already kinda tastes aged. This is really lovely.

Oak-Aged Vanilla World Wide Stout Pences
Damn, this must be an old one! This is super tasty.

Just the best grade of Cantillon wine grape lambic. Phenomenal.

Grand Cru Bruocsella Brut (2016) Pences
Really exceptional: the flavor of old lambic, with extra oak, but then refermented so that it's actually got some carbonation. Delicious.

I want to like this more, but something about it doesn't quite work for me. Too much sugar giving it a kinda lime candy flavor?
The combo of lambic and elderflower is excellent. The floral notes taste almost fresh, there's a note of chewing on the flowers. Lovely.

Enormous maple, but just enough body to stand up to it. Balance is nice as it warms up.

Realized we have some older apricot hanging around, don't want to let the stone fruit fall off here. Still beautifully fruity, though. But the rumors that it gets sourer are definitely true!

Frangelic Mountain Brown Pences
Great hazelnut coffee brown, really smooth and sweet but not cloying. Dangerously doesn't seem like a 9%.

Definite rye note from the grain, some good roast notes, but not that heavy overall -- paradoxically lighter than the Baltic porter v7. Still really tasty, though, a lovely drinkable stout.

A big rich, thick Baltic porter. Clean finish, big roast. I could drink loads of this.

Just an enormous hop bomb of a mainline NEIPA. Really tasty.

Big thick body and great texture. A bit acidic but really nice.

Back at the best bar in the city after fifteen months! So good to be here. And starting off with a perfect light session. Classic citrus and mosaic type hop profile.
